Multiscale continuous double emulsification processes : monitoring and modelling – DEPMod
Emulsions are liquid-liquid dispersions of two immiscible fluids in the form of small droplets stabilized with surface agents. They are widely employed in a large panel of industries such as pharmaceutics, cosmetics and food engineering. They may also present an intermediate step in the formulation of complex systems followed by polymerization, crystallization and/or encapsulation. An abundant literature is available for the characterization and modelling of simple emulsions concerning their preparation and behavior at different scales and in time generally in the case of batch systems. This is not the case regarding multiple emulsions which are more complex then less treated in literature, especially from the process point of view.
The present project aims at exploring new continuous double emulsification processes at different scales through the use of microfluidic devices and static mixers, and developing predictive models of the manufacture and the stability of these complex systems.
